Yarra Valley wines from Coldstream Hills
Cabernet Sauvignon
Coldstream Hills Reserve Cabernet Sauvignon was first made in 1992, & in most releases, is entirely based on fruit from a 3.6 hectare block on the home vineyard planted in 1988. Part of the wine finishes fermentation in new French oak, part is given extended maceration post fermentation. The wine spends up to 15 months in barrel.
Like the Reserve Pinot Noir, it is not made every vintage, but in the best years has a 20 year plus cellaring potential.

There is an emphasis here on varietal fruit and length of flavour, which the cool climate bestows on each grape variety. The Yarra Valley wines are designed to be enjoyed upon release & are attractive when young, but will certainly reward careful cellaring.
When the Yarra Valley and Reserve wines of the same vintage are tasted next to each other, the difference will be immediately obvious, yet the wines (and all Coldstream Hills wines) have a family resemblance.
