Yarra Valley wines from Coldstream Hills

Cabernet Sauvignon

Cabernet Sauvignon has long since been recognised as an outstanding cool climate wine in the Yarra Valley. Site selection, vineyard management and growing conditions all play a pivotal role in its success. Coldstream Hills draws upon a number of north facing vineyards in the Lower Yarra, with all batches being handled separately in small fermenters. The resultant wines undergo maturation in new (typically 25%) and used French oak for fifteen months.

Typically, the style is medium bodied, with attractive dark berry fruit characters, cedary toasty oak and persistent tannin.

There is an emphasis here on varietal fruit and length of flavour, which the cool climate bestows on each grape variety. The Yarra Valley wines are designed to be enjoyed upon release & are attractive when young, but will certainly reward careful cellaring.

When the Yarra Valley and Reserve wines of the same vintage are tasted next to each other, the difference will be immediately obvious, yet the wines (and all Coldstream Hills wines) have a family resemblance.
