Overview

Coldstream Hills has been making sparkling wine, albeit in small quantities, since 1995. Outstanding Chardonnay vintages have warranted making small quantities of Chardonnay dominant Blanc de Blancs for release. Made in the Méthode Traditionelle with only 200 dozen bottles produced, fruit for this limited release is sourced from the cool south-facing slope of the Deer Farm Vineyard at Gladysdale, Victoria. The fruit was hand-picked and gently pressed prior to fermentation. Following secondary fermentation, the wine spent approximatively five years on yeast lees prior to disgorging and release.

Our Blanc de Blancs is made only in small quantities from an exceptional vintage year for Chardonnay. The 2015 vintage follows the excellent 2011 release which was awarded a trophy and 3 gold medals. On the palate, expect an elegant wine with creamy mousse, beautifully balanced aged liqueur and finely tuned Chardonnay acidity.

Nose

Fine, youthful and restrained with attractive notes of lemon pastry, white flowers and nuances of mineral slate. Secondary autolysis notes of fresh bread and hints of toast offer complexity and interest.

Flavours and Palate

Elegant and pure with creamy mousse, beautifully balanced aged liqueur and finely tuned Chardonnay acidity. The palate is both youthful and long with secondary autolysis notes of lemon pastry, nougat and hints of fresh bread.

Yarra Valley, Victoria

Cooler than Bordeaux yet warmer than Burgundy, picturesque Yarra Valley is one of Australia's foremost cool-climate wine regions. An easy one-hour’s drive from Melbourne, the area is home to more than 80 cellar doors. In addition to the huge range of wineries, the area boasts superb contemporary restaurants, authentic rustic farms - and luxury overnight accommodation if the sightseeing gets too much! The fertile Yarra Valley soils produce famously elegant and textured Pinot Noir and Chardonnay.

Vintage Conditions

The growing season began well with a mild and relatively dry Spring. Unlike 2014, fruit set was relatively normal resulting in average yields across most varieties. A notable cooler ripening period allowed fruit flavours to ripen steadily whilst retaining high levels of natural acidity. Fruit quality was excellent, with the wine produced promising finesse, complexity and cellaring potential.

Andrew Fleming - Chief Winemaker

Growing up in wine country Mildura, at just 13 years of age, Andrew attempted to make his own wine; the end result was undrinkable, his father’s shed a shambles, but the winemaking seed was sown. 
After completing a Bachelor of Agriculture at the University of Melbourne, Andrew spent two years at Mildara in Coonawarra before heading to Bordeaux where he furthered his winemaking qualifications with a Diplome National d’Oenologue from the University of Bordeaux. Since then he’s completed vintages at the iconic Chateau Haut Brion in Bordeaux, several vintages in Languedoc, in addition to completing a vintage at Matanzas Creek winery in California’s Sonoma Valley. For six years Andrew was a Winemaker at Lindeman’s Karadoc winery and in 1996, became the Winery Manager of Seppelt in Great Western; providing the perfect segue for his current role as Chief Winemaker Coldstream Hills which he has held since 2001.
