Overview

The Reserve Cabernet was first made in 1992 and in most years is sourced from fruit grown on the thirty year old Coldstream Hills G Block. As a later maturing variety, Cabernet Sauvignon requires careful site selection with north facing hillside slopes being preferable.

Nuances of dark chocolate and nutmeg spice enhance the wine which are supported by seamless French oak. Layered and textural, the palate finishes with a characteristic fine-grained tannin profile.

Silky and concentrated, this wine displays the essence of cool climate Cabernet Sauvignon and will reward careful cellaring for at least fifteen years.

Nose

Classic notes of cassis, blackberry and blue-fruits dominate with underlying cedary French oak, vanilla pod and dark chocolate.

Flavours and Palate

Medium bodied, beautifully layered and balanced, finishing with characteristic fine-grained tannins. Blackberry, cassis and blueberry notes are supported by hints of anise, seamless oak and dark chocolate. Pure and vibrant, this wine is an excellent example of Yarra Valley Cabernet from the outstanding 2017 vintage.

Andrew Fleming - Chief Winemaker

Growing up in wine country Mildura, at just 13 years of age, Andrew attempted to make his own wine; the end result was undrinkable, his father’s shed a shambles, but the winemaking seed was sown. 
After completing a Bachelor of Agriculture at the University of Melbourne, Andrew spent two years at Mildara in Coonawarra before heading to Bordeaux where he furthered his winemaking qualifications with a Diplome National d’Oenologue from the University of Bordeaux. Since then he’s completed vintages at the iconic Chateau Haut Brion in Bordeaux, several vintages in Languedoc, in addition to completing a vintage at Matanzas Creek winery in California’s Sonoma Valley. For six years Andrew was a Winemaker at Lindeman’s Karadoc winery and in 1996, became the Winery Manager of Seppelt in Great Western; providing the perfect segue for his current role as Chief Winemaker Coldstream Hills which he has held since 2001.
