Overview

Overview

Coldstream Hills has been making sparkling wine, albeit in small quantities, since 1995. The first release of the wine was a Blanc de Noir, but in more recent times, it has been a more traditional blend of Pinot Noir and Chardonnay.

The south facing slopes of the Deer Farm Vineyard at Gladysdale provide an ideal source for Chardonnay and Pinot Noir grapes. The fruit was hand-picked and gently pressed prior to fermentation. Following secondary fermentation, the wine spent close to five years on yeast lees prior to disgorging and release.

Philip Rich | Wine Companion

"52.7/47.3% pinot noir/chardonnay. Approximately five years on lees and disgorged with 6.5 g/L dosage. A bright straw green. This is very fine on the nose with delicate aromas of apples, white peaches, freshly poached red fruits, brioche and a little hazelnut. The palate is equally refined, and this builds nicely with its gentle creaminess and fine bead before finishing taut and long. A refined Aussie sparkling."

Taste Description

Taste Description

Nose

Fine and restrained with subtle lemony Chardonnay notes and hints of Pinot perfume. Time on lees has given rise to attractive secondary notes of breadcrust and fresh toast.

Flavours and Palate

Lovely fine bead leading to a beautiful balance of acidity and dosage liqueur. Restrained, yet layered and complex, the palate has great presence and length of flavour. An outstanding year for sparkling from the Deer Farm Vineyard.

Yarra Valley, Victoria

Cooler than Bordeaux yet warmer than Burgundy, picturesque Yarra Valley is one of Australia's foremost cool-climate wine regions. An easy one-hour’s drive from Melbourne, the area is home to more than 80 cellar doors. In addition to the huge range of wineries, the area boasts superb contemporary restaurants, authentic rustic farms - and luxury overnight accommodation if the sightseeing gets too much! The fertile Yarra Valley soils produce famously elegant and textured Pinot Noir and Chardonnay.

The 2017 vintage was a return to a cooler weather pattern with cool spring months and a mild to warm Summer. Rainfall and yields were close to average, allowing grape flavour and sugar to ripen in a steady manner. Acid retention was excellent in the fruit giving rise to wines of freshness, vibrancy, and great balance.

Andrew Fleming - Chief Winemaker

Growing up in wine country Mildura, at just 13 years of age, Andrew attempted to make his own wine; the end result was undrinkable, his father’s shed a shambles, but the winemaking seed was sown.
After completing a Bachelor of Agriculture at the University of Melbourne, Andrew spent two years at Mildara in Coonawarra before heading to Bordeaux where he furthered his winemaking qualifications with a Diplome National d’Oenologue from the University of Bordeaux. Since then he’s completed vintages at the iconic Chateau Haut Brion in Bordeaux, several vintages in Languedoc, in addition to completing a vintage at Matanzas Creek winery in California’s Sonoma Valley. For six years Andrew was a Winemaker at Lindeman’s Karadoc winery and in 1996, became the Winery Manager of Seppelt in Great Western; providing the perfect segue for his current role as Chief Winemaker Coldstream Hills which he has held since 2001.
